Lemon Poppy Seed Recipe - 2 Great Offers Inside!

Recipe prepared below (per 2 oz. serving):

Ingredients:

1/2 package BananaNut VitaMuffin Mix + 1/2 package Golden Corn VitaMuffin Mix

3 large egg whites

1 1/4 cup of water

Zest of 1 whole lemon

1 Tbsp. lemon juice

3 tsp poppy seeds

1 tsp lemon extract

Equipment

Muffin baking pan

Instructions (yields 12 muffins):

Preheat oven to 400F. Line a standard 12 cup muffin pan with paper or foil baking cups.

Combine all ingredients in bowl. Mix until moistened. The batter will appear lumpy.

Spoon batter evenly into muffin cups. Each cup should be about 2/3 full.

Bake for 22-27 minutes or until set and firm, or until an inserted toothpick comes out clean. Enjoy!
